INGREDIENTS BROWNIE
1/4 Cup of xylitol sweetener
1/4 Teaspoon of stevia
1/4 Cup of olive oil
1 Beaten egg
1 Teaspoon of vanilla essence
3/4 Cup of almond meal
1/4 Cup of coconut flour
1/4 Teaspoon of himalayan rock salt
3/4 Teaspoon of baking powder
1/4 Cup of cacao
1 Cup of grated zucchini
1/4 Cup of chopped 90% dark chocolate
INGREDIENTS FROSTING
3 Tablespoons of cream cheese
3 Tablespoons of unsalted butter, softened
3 1/2 Tablespoons of cacao
1 Teaspoon of stevia
2 Teaspoons of vanilla essence
Few drops of hot water (dependant on consistency)
METHOD
Pre-heat oven to 150 degrees celsius, and line a baking tray with baking paper. Dependant on how thick you wish to make your brownies, the smaller the tray the better.
Start by adding the following ingredients into a large mixing bowl. Xylitol, stevia, oil, egg and vanilla essence, and combine well.

Mix the dry ingredients together in a separate bowl, then stir the dry mixture into the wet ingredients and mix thoroughly.

Now to stir through the grated zucchini until all is folded through. Pour and spread into the lined baking tray and place into oven for 20 minutes or until light and fluffy, take out of oven and let cool.

Lastly to top off the brownies with the frosting. Place all frosting ingredients into a mixing bowl and combine with an electric mixer until light and fluffy also. Spread upon the brownies evenly and enjoy these no sugar, no carbohydrate, delicious brownies.
