
BROCCOLI AND CAULIFLOWER BASE PIZZA
152 CALORIES PER SLICE // MAKES 8 SLICES

INGREDIENTS CRUST
1 Broccoli head
1 Cauliflower head
2 Eggs
1/4 Cup of parmesan cheese
1/4 Cup of mozzarella
Pinch of himalayan rock salt
Pinch of cracked black pepper
1 Teaspoon of oregano
INGREDIENTS TOPPINGS
3 Tablespoons of tomato paste
1 Cup of cheese (Your choice I use mozzarella)
1/2 A red capsicum
1 Handful of spinach (As much as you like)
1/3 Cup of cherry tomatoes, chopped
1/3 Cup of red onion
1 Tablespoon of pine nuts
METHOD
Pre-heat oven to 200 degrees celsius, into a food processor add the broccoli and cauliflower until blended to the size of rice. Then place ingredients into a small bowl and microwave with cling film covering to steam until soft.
Let cool then our into a tea towel and ring out any excess water and put ingredients into a large bowl. Add into bowl, eggs, cheese and seasonings and mix well.Pour mixture onto a lined baking tray and shape into a pizza base shape.
Place in oven for 10-12 minutes to set the base, take out of oven and add on your toppings. Return to oven for a following 5-10 minutes or until the cheese is melted and golden in colour. Slice into 8 equal slices and enjoy.
Don't be afraid with the toppings, I have chosen a vegetarian option, however, shredded chicken, beef or pork wold work perfectly on top of this pizza also.
