INGREDIENTS

1 1/2 Cups of medjool dates, chopped

1 Teaspoon of baking soda

50g of butter, softened

1 Teaspoon of vanilla essence

1 Egg, beaten

1 Banana, mashed

1 Cup of grated carrots

1 1/2 Cups of flour

! Teaspoon of ground all spice

1 Teaspoon of baking powder

8 Pieces of walnuts for the top of each muffin

METHOD

Pre-heat oven to 180 degrees celsius fan forced. In a saucepan, add the dates, 1/2 a cup of water and the baking soda. On the stove, cook on medium heat until caramelised and fluffy.

Place butter, vanilla essence, egg, banana and carrot in a large mixing bowl and combine well.

Sift the remaining ingredients into the wet mixture and mix again well.

Fold in the dates and serve equally into 8 patty pans. Place 1 walnut on the top of each of the muffins and place in the oven for 20 minutes, or are golden in colour.
