3-4 Large zucchinis
1 Teaspoon of coconut oil
2 Teaspoons of minced garlic
2 Tablespoons of olive oil
2 Avocados pitted and skinned
Large handful of cilantro
2 Tablespoons of lemon juice
Pinch of rock salt and cracked pepper
Start with cutting off ends of zucchinis and placing in the spiraliser to create the zoodles.
Once spiralised, put coconut oil in the pan and place 'zoodles' in along with the minced garlic, mix through then remove from heat.
Into a blender, add the avocados, cilantro, lemon juice, olive oil and seasonings and blend well into creamy consistency.
Adding to the blender, pour small increments of water into the avocado mixture until the
consistency of the ingredients becomes easy to pour.
Place 'zoodles' into large bowl and pour over avocado sauce, combine and garnish with herbs and parmesan cheese to serve.
